Step 1: Place large deep pan on stove top on high heat. Add oil to pan then add diced onions & cook for 2 mins then add finely diced tofu
Step 2: Cook for 3 mins while stirring
Step 3: In the same pan add diced red capsicum, diced carrot, & ginger. Then cook on high heat for about 3 mins
Step 4: Then add garlic, ginger, baby corns, chopped chestnuts and cook for a further 1 minute
Step 5: Then add the sauces and Chinese five spice while stirring through thoroughly
Step 6: Cook for a further 4 minutes and until sauce reduces and starts to caramelise
Step 7: Cut iceberg lettuce into cups by slicing the edges of the whole lettuce then carefully separating the leaves
Step 8: Serve San Choy Bow mix inside the leaf cups and garnish with coriander
