VEGETARIAN SAN CHOY BOW

Try this fresh and light vegetarian meal which is bursting with protein giving you enough energy to recover after exercise and leave you feeling full and satisfied every time.

Great to cook in bulk for shared family dinners or to have something to crunch on during the week. Don’t miss out on this fantastic option.

Ingredients


  • 500g diced soft tofu
  • 3 garlic cloves
  • 30g fresh cut ginger
  • 30g fresh cut coriander
  • 100g chestnuts
  • 1 diced carrot
  • 1 diced red capsicum
  • 1 diced onion
  • 10g Chinese 5 spice
  • 30ml oyster sauce
  • 30ml soy sauce
  • 50ml chilli jam
  • 30ml Chinese cooking wine
  • 100g tinned baby corn
  • 1 whole iceberg lettuce


Directions

Step 1: Place large deep pan on stove top on high heat. Add oil to pan then add diced onions & cook for 2 mins then add finely diced tofu

Step 2: Cook for 3 mins while stirring

Step 3: In the same pan add diced red capsicum, diced carrot, & ginger. Then cook on high heat for about 3 mins

Step 4: Then add garlic, ginger, baby corns, chopped chestnuts and cook for a further 1 minute

Step 5: Then add the sauces and Chinese five spice while stirring through thoroughly

Step 6: Cook for a further 4 minutes and until sauce reduces and starts to caramelise

Step 7: Cut iceberg lettuce into cups by slicing the edges of the whole lettuce then carefully separating the leaves

Step 8: Serve San Choy Bow mix inside the leaf cups and garnish with coriander
