Ingredients
1 tsp pumpkin seeds
1 tsp sesame seeds
50g sweet potato, cut in 3cm slices, then quartered
3 tsp olive oil
1/4 tsp ground cinnamon
1/4 bunch kale, stems removed & finely sliced
4 cherry tomatoes, cut in half
1/4 avocado, sliced
Cottage Cheese Dressing
2 tbs cottage cheese
juice of half a lemon
Method
1 Heat a medium frypan over medium heat and toast seeds for a few minutes until golden and set aside.
2 Heat oil in pan, dust cinnamon over sweet potato and saute for a few minutes over medium heat. Add 1/4 cup water, season with salt & pepper and simmer until potato is tender. Add kale and tomatoes and cook for a minute more.
3 Blend together dressing ingredients and adjust seasonings. (You may need to add a little water if too thick).
4 Serve salad topped with avocado and dressing.
