Carrot Cake
Ingredients:
3 grated carrots
2 eggs
1/2 cup honey
2 cups self-raising flour
1 tsp bicarb soda
2 tsp cinnamon
1/2 cup oil
1/4 cup chopped walnuts
1/4 cup sultanas
Frosting Recipe:
1 block lite cream cheese
2 tbs honey
Juice of 1/2 lemon
Method:
1. Preheat the oven to 180C.
2. Combine all cake ingredients in a mixing bowl.
3. Pour the mixture into a greased cake tin.
4. Bake for 40 minutes or until the cake is golden brown.
5. Put aside and allow it to cool completely.
6. Mix all frosting ingredients together until smooth.
7. Spread the frosting evenly over the cooled cake.
8. Dig in!
Chocolate Banana Bites

Ingredients:
½ Medium banana
1 tbsp dark choc chips, melted
½ tbsp shredded coconut
Method:
1. Melt dark chocolate.
2. Dip banana into melted chocolate.
3. Sprinkle coconut over the top.
4. Refrigerate for 10-15mins.
5. Once chocolate is set, it’s time to eat!
Raspberry Chocolate Bars
AKA - Your new favourite treat!
Ingredients:
1 cup oats
1/4 cup peanut butter
2 tbs honey
1/3 cup choc chips
2 tsp of coconut oil
1/3 cup raspberries
Method:
1. Blend together the base ingredients until well combined.
2. Press into a smallish dish, lined with baker paper.
3. Melt the chocolate chips and coconut oil together.
4. Pour the melted chocolate mixture over the base and top with raspberries.
5. Freeze for 1-2 hours to set.
6. Slice into bars and enjoy!
